Culatello di Zibello DOP is a premium Italian cured meat from the Parma region, made from the finest lean portion of the hind leg of heavy pigs raised exclusively in the regions of Lombardy and Emilia-Romagna in Italy. It is distinguished by its pear-shaped form, delicate sweet flavor, and refined aroma developed during its long natural aging process of over 12 months. The maturation takes place in humid cellars with natural ventilation, where the unique microclimate of the area contributes to the development of its distinctive flavors and aromas.
