Parmigiano Reggiano is a P.D.O. Italian hard cow's milk cheese with a granular texture, famously known as the "king of cheeses." It is produced exclusively in specific Italian provinces (Parma, Reggio Emilia, Modena, Bologna, and Mantua). It is made naturally (without preservatives) in large wheels and aged for a minimum of 12-18 months (up to 36+), offering a high content of calcium and protein.
